So kids are hungry... Mom wracks her brain... what to fix them for breakfast.... (LIGHTBULB- bright idea?) Pancakes. CRAP!!! Dont have a decent pan to make them on that they wont stick to and become crumbled. So I put my thinking cap on. ((LIGHTBULB... another bright idea...) pulled out the muffin tin, preheated the oven to 400, brushed butter around the cups of the muffin tin, made up the blueberry pancake batter, poured in the muffin tin, and when the oven was preheated i put the pan in. Did not set a timer for the pancake muffins as this was something new that I had never done before. I kept checking the tops of them until they were golden brown. Pulled them out and let cool... stuck a fork in and it popped right out. Omg they were so yummy. Go Super Mom... always trying to be creative in the kitchen.
