Something Ive missed at Christmas. Always remember Mom doing this. So...social studies potluck. Poor Man’s (Holiday) Fruitcake Otherwise known as Mom’s Fruitcake (I’m fairly certain this is the general recipe she used.) Yields two small cakes. 1 cup water or black coffee 1 1/3 cups seedless raisins 1 cup brown sugar 1/3 cup shortening ½ teaspoon nutmeg ½ teaspoon cinnamon ¼ teaspoon allspice ¾ teaspoon salt (KOSHER!) 2 cups all-purpose flour ½ teaspoon baking powder 1 teaspoon baking soda (recipe actually says “soda”) 1 tablespoon hot water 1 small jar candied fruit (optional) ½ cup nuts (optional) 1. In a saucepan combine the coffee/water, raisins, brown sugar, shortening, and spices. 2. Bring to a gentle boil for 3 minutes 3. Let cool. 4. Add salt and baking powder to flour and sift into mixture. 5. Stir soda with hot water to dissolve and blend it into the mixture. 6. Beat in other optional ingredients. 7. Grease and flour loaf pans. 8. Place batter in loaf pans, no more than ¾ full. 9. Bake at 300 degrees for about 1 ½ hours. 10. Stand pan on rack to cool, then turn cake out on rack to really cool. 11. Wrap in plastic wrap inside a tin.
