Sometimes when I tell people that I dont bother with whole grain this, or brown that, they get confused. For one thing, the white versions of these things (bread and rice specifically) taste better. For another, the GI (glycemic index) is virtually identical, and therefore I use the foods based on that information when it is correct to eat them (post workout meals mainly). And lastly, research shows that whole grains type foods, and brown rice - even though they are higher in minerals themselves - actually PREVENT your body from being able to absorb those minerals due to a pesky substance called phytic acid. Youre actually BETTER off eating the white counterparts that have had the majority of the phytic acid removed so that you can absorb these key minerals from the other foods in your diet.
