Southwest Mini Quiche Bites Submitted by Janet Anderson (CA) Ingredients 4 eggs, beaten 2 Tbsp. Southwest Seasoning Salt, divided 1/2 cup sour cream 1/2 cup Corn, Black Bean Salsa 1/4 cup flour 1-1/2 cups shredded Cheddar cheese Directions Combine sour cream and 1 Tbsp. Southwest Seasoning Salt; stir and set aside. Combine eggs, remaining Southwest Seasoning Salt, Corn, Black Bean Salsa, flour and cheese; stir. Pour mixture into greased mini-muffin pan; bake at 400° for about 10 minutes until golden brown. Serve warm with sour cream mixture. Makes 24 mini quiches.
