Spiced sweet picked red cabbage.. you can pickle anything veg like.. cauli, cuc, carrot, pickling is just a way to preserve stuff, like freezing :D shred your leftover raw veg..hoy in a colander over a bowl and cover liberally with salt.. leave 2 hours.. this draws out water. Rinse well (to get the salt off) and dry.. I have a salad spinner, but patting it between towels is fine. I have 1/2 a red cabbage here.. so about 500g and a 1ltr pickling jar..(sterilised) Pickling vinegar.. 300mls white vinegar (you can use cider vinegar, or pickling vinegar, I have white malt, so Im damn well gonna use it!!!) 200mls cider (that cheap shit you drink by the gallon but hide from the posh rellies) 1 WELL heaped tablespoon sugar (any..I have some caster Im trying to get shot of..) 2 bay star anise 1 chopped chili (med heat) 1 teaspoon black pepper/corns (I also added some mustard seeds, optional) simmer to reduce by about 1/2..cool to room temp Hoy the lot in your jar. Top up with vinegar if you need. Will be ready in a few days and lasts well over a month. LOVELY with cold meats, salad, in sarnies, or just in a bowl as you sit there for the 1001 th time watching frozen XX Gail
