~ Spicy Prawns in Feta Masala ~ The nagging wifey about my love for meats, and meats always, never having veggies ever, made me to reconcile with the thought, for once, but did not have the heart to go all Veg, so just for the sake of buttering / creaming / maska-lagaoing Dear Wifey, I planned to cook some veg curry, but just as I started, I couldnt resist the temptation, and tipped in some small prawns to add to the glory of this new blend that I concocted and so very delicious it came out. Marinated the prawns in olive oil, lemon juice, salt and a special paste of coarse ginger, fine chopped garlic, onion puree, green chilli paste, coriander paste, tomato puree, salt, red chilli powder, turmeric powder, cumin powder, coriander powder, black pepper powder, and let it stand for about 30 minutes only. Meanwhile, heated my pan with olive oil, added in Cumin, Fennel seeds, Fenugreek seeds, Nigella seeds, Whole red chilli(super hot ones), Cloves, Green cardamom, Bayleaf. As the tempering was ready, dropped in the prawns along with the veggies (carrot dices, beans in fingers and peas), cook them by stirring occasionally for about 15 minutes and then poured in some water to let the prawns moisten up again and get a little re-hydrated. As the water began to simmer and the sauce getting to a consistency, tipped in some Feta cheese, yes this was to break the monotony of adding butter or milk or cream or even the idea to add coconut cream or milk was discarded, and this was concocted in my head this morning when i wanted to do the unusual today. The sauce simmered, the prawns were now sizzling and craving attention, as I forked one up, Oooooooh lalala, what a lovely twist to the tale was emerging, couldnt wait for the cheese to melt gradually into the delicious sauce and impart its unique smoothness and delicate flavor, and then impart the succullence to the prawns and veggies, as I sank in my Parathas into them and licked and licked my fingers with every bite, breathing in the beauty of the plethora of spices aplenty, DELECTABLE, thats the word !!!
