Spinach and Brushetta Pizza Bread... just a little snack for my daughter and friends on the way to the beach today.... Recipe: long italian roll toasted, fresh clean spinach mixed with a little olive oil, brushette: diced tomatoes, salt and pepper, olive oil, garlic and fresh herbs, oregano, basil, rosemary, thyme (from my garden) add a little olive oil to toasted bread, topped with the spinach, add some grated cheese, then top with the tomato mixture, put back in over ( 350 degrees ) just to slightly wilt the spinach for about 5 minutes, the idea is to just warm the vegetable not cooking out the vitamins ok now drizzle the balsamic vinegar that has been cooking to reduce (1/4 cup vinegar cook on low for 5 minutes) to a nice think syrup. Enjoy its delicious at room temp or chilled!!
