Sticky sweet and chilli chicken - a firm favourite in our house. Marinade one baby chicken ( with bones cut into pieces) in a mixture of 3 tblsp dark soya sauce 2 tblsp maple syrup 2 tblsp freshly squeezed orange juice 1 tblsp grated ginger. You need to leave the chicken in this for at least four hours and ideally overnight. Now heat 2 tblsp oil in a wok until smoking and fry for a minute 2 red onions , 1 pepper and green chillies. ( to taste) all finely sliced. Then add the chicken pieces to this draining it from the marinade. Stir on high heat for 3-4 mins until browned and then add the liquid mixture that was left behind, mix well and cover on reduced heat until the chicken is cooked and well coated with the reduced sauce. Serve hot with vegetables, plain rice or noodles.
