Stuffed Potato Skins Prep Time: 5mins Cooking Time: 15-20mins for microwaved potatoes/1hr for oven baked potatoes Serves 4-6 You will need: 500g minced beef 1 Tblsp rapeseed oil 1 onion, peeled and finely chopped 2 Tblsp tomato purée 1 tin chopped tomatoes 1 teasp mixed herbs (I used basil & oregano) 4-6 medium sized potatoes 75g cheese (edam), grated (I used plain old cheddar) Method If you are baking the potatoes in the oven, pop them in first - repeatedly stab the washed potato with a skewer, and wrap in tin foil, before popping into a pre-heated oven @180C. 1. Heat the oil in a frying pan, and cook the onion gently for 5-6 minutes, until tender. 2. Add the mince, breaking up any lumps, well browned. 3. Stir in the tomato purée, tomatoes and herbs. Bring to the boil and simmer gently for 30 minutes until reduced and thickened. 4. Bake or microwave 4-6 medium sized potatoes. 5. Scoop out the flesh of the potato and combine with the mince mixture. Reserve the skins. 6. Fill the potato shells with the mince and potato mixture. Sprinkle with grated cheese. To Serve: Serve with a mixed salad or some green vegetables. #mince #beef #potato #recipe #dinner #cooking #lunch
