Take 8-10 stalks of fresh rhubarb and cut into 1 pieces. Clean, hull, and halve 1 lb. fresh strawberries and add to rhubarb slices. Sprinkle 2/3 c. brown sugar on prepared fruit, stir until well blended, and let sit in fridge for two hours. Place fruit/sugar mixture in medium saucepan along with 1/3 c. fresh lemon juice, turn heat to medium and let come to bubbling. Cover with lid, turn heat down to low, and let simmer for 30 minutes. Turn heat off and leave covered for 1 hour. This compote is great warm over ice cream or cold and added to your favorite cereal. I eat it with my cereal on Thanksgiving morning.
