Taking a bit of a break (sort of) while I build the sweet starter for the Pondoro in the Suas book (yippee, Amazon finally had an affordable used one). Once the starter is good to go (2 days) the bread requires another 2-3 to make. I hope its good ;-). Also waiting on the yeast so I can start a biga for another stab at ciabatta and the arrival of the heritage flours. Feels strange not to have anything cooling right now.
