Thai island vibes and traditional local soup recipe... The magical Moon Dance guest house at the tip of Koh Tao island in Thailand has an exotic restaurant with breath taking views of the bay. The little restaurant, run by a lovely local lady, offers unusual sitting areas on wooden decks floating on the edge of a cliff. You can relax on white sandy beaches, swim in crystal clear water surrounded by colourful fish, and enjoy a heavenly coconut cream soup (vegetarian Tom Kah Gai) all in one day! After visiting the restaurant three days in a row, I finally convinced the lovely lady owner to give away her delicious soup recipe to me. I bring you this Thai soup recipe with love. It is as simple, quick, and easy as it gets! 5 minutes preparation, 15 minutes cooking time, and its yum time! What you will need: 3 cups organic coconut milk 1 cup fresh water 1/4 tsp dried chilli flakes 1 tbs coconut sugar 1 inch grated ginger juice of 1 lemon Pink Himalayan salt 1 Boc choi, chopped Green beans (a handful), chopped 2 Carrots, chopped 5 Mushrooms, chopped 2 Green onions, chopped (for garnish) How to make: Add all ingredients together (all but the green onions) in a pot, and bring to a boil. Simmer for 15 minutes. Remove from the fire and serve. Garnish with green onions and season with salt to taste. Enjoy.
