There are 2 things a majority of my nutrition clients initially generally struggle with: 1. Eating breakfast 2. Eating enough veggies So I have a solution for both. Assemble a casserole ahead of time to eat for breakfast throughout the week. Pick your favorite veggies and throw them in the mix to ensure youre getting your day off to a great start. For this casserole: 1.Set oven to 400 degrees. 2. Dice 4 small/medium sweet potatoes and toss in evoo or coconut oil. Place on pan in oven for 20-25 minutes. 3. While tates are cooking brown 1lb all natural pork sausage or breakfast meat of choice. 4.While browning the meat sauté your veggies in the same pan. I used 1 small yellow onion, 1 red pepper and 1 green pepper. 5. Place meat and veggies in bottom of casserole dish, place sweet potatoes on top, add garlic powder and salt to taste. 6. Top with 1-2 cups fresh chopped spinach. 7. Whisk 10 eggs and pour over casserole and finally mix to combine. 8. Back for 20-25 or until eggs are set in the middle. Whip up this recipe Sunday and munch on it throughout the week for a quick and easy breakfast! Share this video on your page to save the recipe and use later :)
