Banana and Sunflower Seed Cookies (I can attest these are delicious!) 1 2/3 cups all-purpose flour (whole-wheat flour would be fine too) 1 tsp baking soda 2 very ripe bananas, mashed 1 stick (1/2 cup) butter, softened 1/2 cup firmly packed light brown sugar 1 tsp vanilla extract 3/4 cup sunflower seeds Put the flour and baking soda into a bowl, mix to combine, then set aside. Put the bananas, butter, sugar and vanilla into a large bowl and beat until fluffy and combined. Fold in the flour mixture, a little at a time, until well mixed, then stir in the sunflower seeds. Cover the bowl with plastic wrap and chill in the refrigerator for 1 hour. Place tablespoons of the cookie dough, well spaced, on 2 baking sheets lined with parchment paper. Place in preheated oven at 350 F for about 12 minutes or until lightly golden. Let cool a little on the baking sheets, then transfer to a wire rack to cool completely. The cookies can be stored in an airtight container for up to a week.
