(This recipe is my own created recipe ,we eat this cake almost everyday ,specially in Ramadans sahri .very healthy and filling!) Heart healthy Muffins! Ingredients; 2 banana mashed ( about 1 cup), 1 cup whole wheat flour , 1/2 cup honey ( u can use sugar same amount ), 3/4 cup cooking oats ( u can alternate same amount whole wheat flour), 1/3 cup olive oil ( u can use cooking oil), 1/2 teaspoon baking soda, 1/4 cup hot water, 1/2 teaspoon salt, 2 eggs, 1/2 cup nuts chopped ( I use almonds) optional, 1/2 cup chocolate chips ( I use dark )optional, For streusel topping ;( optional) 1/4 cup whole wheat flour 1/4 cup cooking oats ( or use same amount flour ) 2 tablespoon butter 2 tablespoon olive oil ( or use butter) 1/2 cup brown sugar ( use less if u like!) 1 tablespoon cinnamon powder ( use less ,if u like!) Mix all streusel topping ingredients well and set aside! Method; Preheat oven 350F Mix wet ingredients first , in separate bowl mix dry ingredients , Then add wet ingredients to dry ,mix them well ( dont over mix ). Scoop batter into muffins liner Or transfer Into cake pan . Sprinkle streusel topping ( if using) Bake ,until knife comes out clean . Enjoy! Note ; u can alternate banana with dates ,also u can add raisins into the batter! Umm e Zakaria
