This recipe wont work for anyone that is following a paleo diet as it contains grains, but it is super healthy and contains all whole grains. Cook one cup organic quinoa with two cups of water for 15 minutes and then pull off burner but let sit in pot with lid still on for 10 more minutes. While cooking quinoa, thaw 1/2 cup frozen corn or if using fresh - cut corn off of two cobs, chop 1/2 red bell pepper, dice a few tablespoons of red onion, drain and rinse 1 can of black beans and chop 1/4 cup cilantro (or to taste). In a separate bowl combine salt, pepper, 1 1/2 tsp garlic powder, 1 1/2 tsp cold pressed olive oil and juice of half a lime. Once quinoa has cooled a bit, pour in bowl with veggies. Add more salt and garlic powder directly to quinoa and stir. Then pour half dressing on quinoa stir and the other half of dressing and stir. Chill in fridge for 1 1/2 hours before eating or eat warm immediately.
