This was dinner tonight. I often make salads to get in my veggies. Bell peppers - the worlds healthiest food! Did you know that?? I throw them in raw so I maximize the nutritional value. Tonight I also added radishes and seeds. I like to use goat cheese in my salads. Its easier on the human digestive system and lower in calories, cholesterol and fat than its bovine counterpart. In addition, goat milk cheese is a good source of calcium, protein, vitamin A, vitamin K, phosphorus, niacin and thiamin. Ok and finally salad dressing! I add seeds, fresh corn, goat cheese, and avocado for flavor so I dont have to use so much dressing. Women think, oh Im eating a salad Im so healthy! but then cover it in fattening, calorie laced dressing. I use a tsp. of balsamic just to add a bit of flavor. Skip the dressing if you can! Try squeezing a lemon over your salad instead!
