Today is National Hummus Day! (Who knew?) And to honor this very special day, from our very own Josie A. G. Shapiro, a recipe for Adzuki and Edamame Hummus: 1 cup soaked, drained Adzuki beans (soak covered with water for 24 hours) ½ cup shelled edamame 3 tablespoons sesame paste (Tahini) 3 tablespoons olive oil 2 tablespoons lemon juice ¼ cup water ½ teaspoon cumin ½ teaspoon salt ¼ teaspoon black pepper 2 tablespoons cilantro leaves Boil one cup of soaked Adzuki beans (in enough water to cover, plus 2-inches) for 30 – 40 minutes or until tooth tender. Drain and cool. In a food processor, blend together cooked Adzuki beans along with all other ingredients until smooth. Serve with vegetables.
