Today was probably one of the best Christmases Ive ever had, with Ura P Auckland right by my side. We worked so hard to make the day special for everyone and it truly was. This year was a rare year when both my children were away together with their respective fathers for Christmas so it was just my parents and us this year. Dad has had a major operation and has been incapacitated for the past three months so we drove to pick them up to enjoy the day with us. Lunch (made by me with menu, prep and assistance by Ura) was just divine. Ura selected beautiful wines with the meal and I did an entree of seared brandy scallops served on pork belly with spicy plum sauce (a meal I made up); main was a maple glazed Turkey breast wrapped in prosciutto with cranberry, date and pecan stuffing rolled in pancetta. I served a caramelised onion and cauliflower side with peas and beans and almonds with lemon. Dessert was a chocolate hazelnut pavlova with brandy cream and toffee shards ...there was a plum pudding too but it never saw the light of day we were too stuffed as it was!! Ura gave me the most beautiful gifts including another gorgeous #Camilla dress and Christian gave me some delightful bath salts. Now...as we have three more nights child free we decided to head up to Noosa for a beautiful Epicurean adventure: our gift to ourselves! Merry Christmas!! đđâď¸đ âď¸đđ
