Todays Top Tip for More Fish in March: Dont forget that Shellfish count too. They only have about 1/10th of the amount of Omega-3 as the oily fish but a similar concentration to other white fish and definitely more than meat. Also, when you are eating shell fish you are not eating meat and therefore helping the Omega-3 v Omega-6 ratio. Remember its the balance of the two that is important. I nicked this recipe for prawn rice from a Sainsburys Magazine. Loads of veg too. 1 tbsp olive oil 3 large shallots (or a small onion), finely chopped. 3 garlic cloves, finely chopped 4 tbsp tom yum paste (I used some Thai ginger and lemongrass paste I had in instead) 250g Thai jasmine rice 750ml hot chicken or veg stock 225g frozen raw jumbo prawns (defrosted) 175g mangetout and baby corn 100g tenderstem broccoli a few basil leaves 1 lime cut into wedges 1. heat the oil and saute the onion (2 mins), add the garlic and tom yum paste (2 more mins). Stir in the rice to coat. 2. Pour in the hot stock and bring to boil. Cover and cook low for 8 mins. Add prawns and veg. Cook with lid on for 3-5 mins until prawns cooked through, veg & rice tender and stock absorbed. 3. Scatter the prawn rice with the basil leaves and serve with lime wedges.
