Tokwat Baboy and Goto... (the perfect combo) Goto Ingredients: 3 lbs parboiled beef tripe and intestine. 1 1/2 cup sweet rice 2 tbsp fish sauce 2 tbsp chicken powder 14 gm saffron additional 14 gm saffron for topping (optional) 1/2 cup fried garlic (topping) chives lime juice fish sauce 12-16 cups water 2 tbsp olive oil finely chopped white onion 3 cloves finely minced garlic ground black pepper Cooking Instructions: Parboil beef intestine and tripe until very tender. Discard liquid, let it cool. Slice into strips and rinse with hot water to remove excess fat. When water is completely drain. Sautee with garlic and onion. Add water and bring to a boil. Then pour in sweet rice and simmer until cook and stirring occasionally (add more water if it is too thick). Season with fish sauce, chicken powder and ground black pepper and saffron. Serve and top with fried garlic, chives and (saffron is optional) Drizzle lime juice and fish sauce. Tokwat Baboy Ingredients & Preparation: 2 lbs pork butt slice ito strips 2 lbs tofu Light kikkoman soy sauce Rice vinegar finely chopped red onion ground black pepper Fry pork strips until brown and crispy. Drain oil and set aside. Then fry tofu until light brown and crispy. Let it cool then slice into bite size cubes. Sauce: Blend ligth kikkoman sauce rice vinegar, chopped red onion and dashes of ground black pepper. Pour soy-vinegar onion sauce into the fried tofu and pork when ready to eat.
