Toresnos de papa/tortitas de papa con caldo Boil and peel potatoes, smash and add salt. Form potatoe into patties. Whipp one egg per patty, whip egg whites till fluffy, then add salt and egg yolks. Heat up oil in a pan, cover patties in flour then dip in egg and place in hot oil. Turn till golgen on both sided. For caldo i place 2chiles guajillos in hot water for half hour. Chop up onion, jalapeno and cilantro. In blender put chiles without seeds,piece of onion,1clove of garlic,1roman tomatoe, 1/4cup of flour and water. Blend for few minutes. Heat up little oil and sautey the chopped onion jalapenos and cilantro, pour in sauce (passing thru strainer first). Add cumin salt and more water. Cook till caldo gets little thicker.
