Turkey Pumpkin Chili 2 Tablespoons olive oil 1 small onion, minced 1 bell pepper (any color), minced 2 cloves of garlic, crushed 1 lb ground turkey 1 can of pumpkin 1 can of diced tomatoes, with juice 1 can of black beans, drained and rinsed 1 can of chili beans, your preference of heat (do not drain or rinse, you want that chili sauce) 2 Tablespoons of chili powder (most recipes call for 1, but I love the flavor of a good smokey chili powder, so you might want to just start with one) 1-2 good dashes of cayenne pepper (optional) 1 teaspoon ground cinnamon ¼ teaspoon ground ginger ¼ teaspoon ground nutmeg ½ teaspoon ground sage Heat oil in a saucepan over medium heat. Add onions, peppers and garlic. Sautee until onions and peppers are soft. Add ground turkey and cook through, breaking up the turkey. Add the tomatoes, pumpkin, both cans of beans, 1 can of water and all of your spices. Give it a good stir and cook, on medium low heat for 30-45 minutes to develop the flavors, stirring semi-often. Be sure to stir it deep so it doesn’t burn. This recipe definitely can be played with. It tastes like chili, with pumpkin for sure. I suspect if you left out the pumpkin pie type spices, it might be less apparent that it’s in there. Also, I added the sage (didn’t see a recipe with that herb), but you could switch that out for something you think would work better. One recipe called for cumin (a good one in chili), one just had the pie spices and even added sugar :( . Anyway, if you’re so inclined to try it, this one was pretty good.
