Turtle Brownies! Bake 360* for 20min Brownie Layer: 3/4 cup unsalted butter 3oz unsweetened chocolate (coarsely chopped) 3 large eggs 1 cup granulated sugar 1/2 cup packed light brown sugar 1 1/2 tsp vanilla extract 1/4 tsp salt 1/2 cup plus 2Tbsp all purpose flour Filling: 36 caramels (about 10oz) unwrapped 1/2 cup heavy cream 2 1/2 cups pecans (about 10oz) Chocolate Topping: 3 oz semisweet chocolate, coarsely chopped 2 1/2 Tbsp heavy cream 1 tsp light corn syrup 1. Preheat oven 350* 2. Prepare Brownie layer by melting chocolate and butter over low heat, stir until smooth, remove from heat and let cool for 10min. 3. in a large bowl, beat the eggs and both sugars w/ a wooden spoon until well blended. Stir in the vanilla, then gradually beat in the chocolate mixture and the salt. Add the flour, stirring just until smooth. 4. Scrape into prepared baking pan. Bake for 20-22min, until the top is firm to touch. Set pan aside to cool. 5. in a heavy saucepan, melt the caramels w/ the cream over low heat, stirring frequently with a wooden spoon until smooth. Add he pecans and stir until they are well coated. 6. Spread caramel filling evenly over brownie layer. 7. In a small sauce pan, melt the chocolate w/ the cream and corn syrup. Stir until smooth. Use a fork to drizzle the chocolate topping generously in a zig sag pattern. 8. Refrigerate briefly to set the chocolate. 9. Slice and enjoy 10. Store covered in fridge.
