Understanding that each athlete will recover and adapt at different rates, Im still going to make this blanket statement: If you train 7 days a week, especially with some intensity and duration, you will NOT be as strong as if you took at least one day off a week. Its a physiological fact that we get stronger during rest not during training. Exercise tears down, recovery allows us to build up. And its impossible to lose strength gains in just one day off. In fact, its generally accepted that we can take up to 2 weeks off without losing any performance gains.
