Vegetarian/Vegan "Bolognese" Sauce 1 cup of organic puy lentils (rinsed & soaked overnight) 2 carrots 1 capsicum 2 zucchini large handful of kale or spinach fresh oregano (2 teaspoons of dried herb also) fresh basil ( 2 teaspoons of dried herb also) asafotida 1 large can of tomatoes or fresh tomatoes. 3 large tablespoons of tomato paste. 3 bay leaves In a pan heat coconut oil to melting point. Add the dried herbs but be careful not to burn or they will become bitter. Add the chopped carrots & zucchini. Saute and lightly cook. Add the capsicum... Cook for about 5 minutes. Then add the drained lentils. Add the tomatoes, tomato paste & bay leaves. Water to cover... Simmer gently for 1 hour checking water. When cooked blitz with a bar mix. Use this with spagetti or as a filling for cannelloni. You can also use it to make lasagne. Enjoy!
