Veggie side dish! - Italian Theme – Add more biggies to your diet and kick it up a notch in the flavor department! Garlic, Basil, Oregano, Rosemary, Yellow Onion, Flat Italian Parsley, Yellow and Red Bell Peppers, regular Mushrooms and Eggplant. I love to throw all in the oven and roast them. I cut them into chunks, toss them with olive oil, whatever hearty fresh herbs I have on hand, and garlic cloves (in their paper). Roast in the oven at 400 until tender. A delicious side dish, omlette topper, or topper for bruschetta! #Baked #Italian #veggie #foodprep. #21dayfix
