Wanted to make the best of the lobster tails that I found on sale at this afternoon at Publix, so I figured Thomas Kellers French Laundrys technique of butter poaching was the way to go. Par boiled the tail for 2 minutes in salted water, then into an ice bath, so that the meat could be delicately removed from the shells. Then placed into a shallow pan containing a tablespoon of water in a stick of butter emulsion, the lobster tails with a bamboo skewer up the center to prevent their ruling, were placed and poached and turned so that were just barely cooking. Served alongside a seafood risotto and sautéed broccolini. A baby green salad with fresh diced peach, shaved manchego, pralined pecans, craisins, shaved fennel and fried shallots in a sweet balsamic vinaigrette. Boom!
