Heres a healthy option from Shifts in house nutritionist Alyssa Steak Stir-Fry Ingredients: 1 pound lean sirloin steak cut into strips 1 cup red pepper 1 cup orange pepper 2 cups snow peas 1/2 cup green onions 1 cup low-sodium chicken stock 2 Tbs sodium-reduced soy sauce 2 teaspoons peanut butter 1 Tbs grated ginger root 1 Tbs corn starch 1 tsp sesame oil 1/2 tsp red pepper flakes 2 cups rice ---try Lundberg Wild Blend (look in the Organics section - it’s not organic, but that’s where I find it at Zehrs) Directions: Heat a small amount of sunflower oil in a skillet. Add the beef and cook over high heat until beef is no longer pink. About 4 minutes. *Remember to cook meat that has been mechanically tenderized medium well (71 Degrees Celsius/160 Degrees Fahrenheit.) Remove from skillet and set aside. Put red and orange pepper, snow peas, onions in skillet. Cook until tender. Whisk broth, peanut butter, soy sauce, ginger, cornstarch, sesame oil, and red pepper flakes. Add to veggies along with the beef. Cook until sauce thickens and is bubbly. About 2 minutes. Serve with rice.
