We know whats for dinner tonight! Chicken Breast stuffed with Swiss Chard, Apples, Walnuts, and Gorgonzola with a side dish of Roasted Zucchini with Tomatoes. This easy, delicious homemade recipe was developed by one of our Facebook fans, Scott Ladieu and were sharing it with you. Thank you Scott! Chicken Breast stuffed with Swiss Chard, Apples, Walnuts, and Gorgonzola Serves 1 or 2 1 large chicken breast, butterflied. 6-10 Rainbow Chard leaves, stems removed and cut into small pieces Small apple diced 1 tablespoon Gorgonzola cheese. 1 tablespoon chopped walnuts or pecans Mix together chard, apples and walnuts. Place mixture on one side of butterflied breast and spoon Gorgonzola over the top of chard mixture. Fold chicken breast over chard stuffing, season with salt and pepper and place in a glass baking dish. Bake at 400 for approximately 35 minutes. Roasted Zucchini with Tomatoes Serving for 1 1 medium zucchini cut into small chunks 2 small or 1 medium tomato cut into small chunks 6-8 fresh basil leaves cut into small strips 1 tsp olive oil Salt and pepper to taste. Combine all ingredients, place in glass baking dish and bake in a 400 oven for approximately 20 minutes. Zucchini, chard and tomatoes came from my home garden. Enjoy the recipes!
