We used to have many varieties of aromatic rice grown in different parts of Odisha. The grains are small but aroma is fabulous. In the past, Royal Families in the growing areas used to extend patronage to the cultivation and the rice used to travel to Royal kitchens. These varieties of paddy are totally averse to chemical fertilizer and even to liberal dose of manure. Farmers generally opted for high yielding varieties and these exotic ones became scarce. Varieties are getting fewer. Odishas Hotels--particularly the high end ones-- should patronize these varieties. In State Banquets and Raj Bhavan these varieties should be used. Yesterday my good friend Jagadish Pradhan has kindly agreed to arrange some KALAJEERA Rice for me.
