Well, everyone is gearing up for the summer. The lack of daily routines during the summer can leave kids feeling bored, and they can end up lounging around snacking or sitting in front of the television or computer. Parents can involve kids in meal planning, such as making lunch and/or dinner. For some kids, helping with meal prep is worse than doing homework, but other kids really enjoy it. For kids who have no interest in helping out in the kitchen, introduce them to some healthy, tasty treats and snacks. Here follows a couple of fun, yummy recipes. Easy Freeze Pops Serves 4 1 cup fresh fresh organic raspberries 2 cups sliced fresh organic strawberries 1 tblsp. Garden of Life Extra Virgin Coconut oil (melted) 1 tblsp. ripe avocado 1/2 tblsp. raw, organic honey Place all ingredients in a blender and blend until smooth. Pour equal amounts of mixture into freeze pop molds and freeze several hours before serving! Banana Boat Ice-cream Serves 2-4 2 cups frozen organic banana chunks 1/2 cup light organic coconut milk 1 tblsp. raw, organic honey 1/4 tsp. vanilla extract Place all ingredients into a food processor or a Vitamix and blend until smooth. Serve immediately.
