What I used those rolls for -- a TGIF party with journalists. I made pate chaud (puff pastry nibbles filled with a meat and cognac mixture, see IVK for the recipe) to fuel people up. Then I taught them how to fold wontons for tofu and spinach wontons in chile oil. While they did that I set up a banh mi bar with char siu pork and Thai fried omelet. I made 3 kinds of pickles (this was my 2nd of 3 events in 3 days!) and let them at it. Reheated in the oven with a rubbing of water to recrisp, the little rolls were a hit. I also had lettuce wraps to keep things less bready. The event organizers and hostess, Los Angeles Times journalists Anh Do and Cindy Chang, served artisanal ice cream! These photos are by Anh Do.
