When the weather gets cold, the cold get cooking...and Ive been doing that today. After a day of bbqd ribs, and the best baked mac & cheese Ive ever made, the temps dipped to the mid to lower 50s, soooo, what else to do but to make some of the best chili Ive ever developed. This is totally MY recipe. I took some of the best & put them together into the following: MY BEST CHILI RECIPE Olive oil 1 Lg onion diced 4 tsp. minced garlic 1 green pepper diced 1/2 red pepper diced 1/2 yellow bell pepper diced 1 lg. jalapeno pepper finely diced 4 oz. sliced mushrooms 2 cans fire roasted tomatoes 1 lb. ground beef 1 lb. ground pork 45 oz. tomato sauce 2 16 oz. cans kidney beans, drained 6 Tbsp. chili powder 1 tsp basil 1 tsp oregano 1 tsp thyme 1 Tbsp cayanne 2 Tbsp smoked paprika 1 can/btl of quality beer salt & pepper to taste Brown meat in a large frying pan. Salt & pepper the meat while cooking. Drain & place in a 5 qt pot. Saute onions, jalapeno, mushrooms & peppers in same pan. (add the minced garlic when the rest of the veggies are about half done.) Add a little olive oil if the meat didnt leave enough fat. Meanwhile, add remaining ingredients to main pot. Add sauteed veggies, bring to a light boil, reduce to medium heat & simmer for approx. 1 1/2 hrs., stirring every 15 mins. (2 hrs. if you can stand waiting that long) This recipe makes a very thick chili. If you like your chili a bit thinner, you may either add more tomato sauce or a bit of beef broth or stock.
