While Raina Sims and I where at the produce market today we ran into an Asian lady that gave us an idea for Bok Choy. Here is my creation! It is delicious! 3-4 large tomatoes, washed and quartered 1 large Vidialia onion, peeled and quartered 7-8 large peeled garlic cloves 1 large jalapeño , sliced lengthwise, seeded if you dont want the heat Place all of these vegetables on a foil lined cookie sheet and broil until the tomatoes and pepper are slightly blackened While the veggies are cooking, take a block of extra firm tofu, cut in large cubes, and fry it with sesame oil until golden on all sides. Wash and quarter lengthwise 5-6 Baby Bok Choy. When the veggies are done, remove the tomato skins and place the roasted veggies in the food processors and chop. Add the mixture to the fried tofu cubes, stir gently and add the Baby Bok Choy. Stir gently and add the juice of about 3 fresh limes. Add about 3/4 teaspoon salt and a handful leaves of of fresh cilantro. Simmer gently for about 5-6 minutes until the Bok Choy is tender crisp. I served it over Jasmine rice.
