Whole Foods Touchdown Turkey Chili By: Kayla Little, RD, LD, cPT Football and fall calls for a great pot of chili! Try this nutritiousrecipe on those cool fall days. Whole Foods Touchdown Turkey Chili 1 tablespoon olive oil 1 medium yellow onion, finely chopped 3 cloves garlic, chopped 1 pound ground turkey 1 (28 ounce) can chopped tomatoes, with their liquid 2 cups chicken or vegetable broth 2 tablespoons chili powder 2 teaspoons ground cumin 1/2 teaspoon salt Ground black pepper, to taste 1 1/2 cup cooked kidney beans, drained 2 1/2 teaspoons chopped green onions (optional) 2 1/2 teaspoons greek yogurt (optional) Heat oil in a heavy, large pot over medium heat. Add yellow onions and garlic and cook, stirring, until soft but not brown, about 10 minutes. Add turkey and brown it, breaking it apart with a fork as you go. Add tomatoes, broth, chili powder, cumin, salt and pepper and simmer for 30 minutes. Add beans and simmer for about 15 minutes more to blend flavors. Serve chili immediately, or make a day ahead and reheat. Garnish with green onions and greek yogurt, if you like.
