Yesterday I went to an all day class to get certified in ServSafe (a food class) and while there I learned an amazing thing! My husbands grandmother is right and everyone owes her an apology! mayonnaise even if opened DOES NOT need to be refrigerated because of the acidic element of vinegar, this may not apply to home made mayos. It is the item you put into the mayo that has gone bad. And yes it does say refrigerate after opening but that is for quality and not necessity. The mayonnaise may even separate but this is not a sign of going bad! Potatoes tend to go bad fast because often they are not prepared correctly and they contain spores, which can spread toxins quickly with temps that are out of range! This blew me away!
