Yesterday a friend gave me the recipe for green enchilada sauce. Tried it today and decided it is a keeper. Put in a pot to boil, three boneless chicken breasts, 12 husked tomatillos, two whole jalepenos, one quarter yellow onion, one clove garlic. Cover with just enough water and boil until tender, about 45 minutes. Take out chicken and shred to use for your enchiladas. Pour the water with vegetables into a blender and puree, and that is your enchilada sauce. Yummy.
