Heres how to make the perfect steak--put a cast iron pan on the stove (or a cast iron griddle like I have) and heat it on high for a minimum of 7-10 minutes. That pan should be so hot you think it is surely going to explode at any moment. While thats heating, vigorously dry the steak--I usually take a towel and roll the steak in it pressing with all my might. Brush both sides with oil and put more salt than you think you need. Brian doesnt like black pepper, so I use Chipotle Pepper instead. When the pan is hot, hot, hot put the steaks on it and set a timer for 4 minutes. When it goes off, turn them over and set the timer for 4 minutes again. At the end of that time, take them off, put a pat of butter on each steak and wrap them in foil. Let them rest for at least 5 minutes, more is better. You will wonder how you ever ate a steak from the grocery store, seriously.
