ZEPPOLI........ 200g flour 100g sugar 2 tsp baking powder pinch of salt 1 egg 150ml milk FILLING.... 400g rikotta 50g icing sugar half tsp vanilla (optional 1 tsp brandy,chopped cherries,candied peel, chopped chocolate) sieve the flour, baking powder and salt, Rub in margerine, Add the egg,and enough milk to form a dough, roll into balls and deep fry until golden brown, cool on absorbent paper, combine all filling ingredients, slit buns, fill with rikotta mixturemand dip in syrup or drizzle honey over them , sprinkle chopped nuts over top
