Zesty Italian Vegetable Macaroni Salad A vegetable based salad with whole wheat macaroni pasta Yield: 8 servings (1 cup per serving) Ingredients: Mixed Vegetable Macaroni Salad · 2 cups whole wheat macaroni pasta, cooked (or use any kind of pasta) · 1 cups of broccoli florets, chopped · 1 cup string beans, chopped · 1 cup of carrots, sliced · 2 bell peppers, diced · 1 cup of cherry tomatoes, halved · 1 red onion, diced Italian Dressing: · 2 tsp garlic powder · 1 Tbsp onion powder · 2 Tbsp ground dried oregano · 1 Tbsp dried parsley · 1 tsp black pepper · 1 tsp of ground dried basil · 1 tsp of dried ground thyme · 1 tsp of dried celery leaves · 1 cup red wine vinegar · 1/2 cup water · ¼ cup olive oil Directions: In a large bowl, add all the Vegetable Macaroni Salad ingredients together. In a small bowl whisk together all the Italian Dressing Ingredients together. Add ½ cup of the dressing to the salad and mix well until the dressing evenly coats the salad. Ready to serve!
