Ingredients: 2 cups milk 5 tbsp sugar 1 tbsp cornflour 1/4 cup full fat milk powder 1/2 cup (100 grams) fresh cream 3 tbsp chopped mint leaves (phudina) 1 tsp lemon juice a few drops peppermint essence 2 to 3 drops green food colour 1/2 cup chocolate chips Method: Dissolve the cornflour in 4 tablespoons of cold milk. Combine the milk, sugar, cornflour solution and milk powder and bring to a boil. Simmer for 2 to 3 minutes while stirring continuously. Cool completely. Add the cream, mint, lemon juice, mint essence, green food colour and mix well. Pour into a shallow container cover and freeze till almost set. Divide the mixture into 2 batches and churn each batch separately in a blender till it is smooth. Add the chocolate chips and mix lightly. Transfer both batches into a shallow container. Cover and freeze till firm. Scoop and serve.
