heres my recepie for reuben pot pie Ingriedients 1 1/2 cups of all purpose flour 1 1/2 cups flour 1/2 tsp salt 1 tsp of ground caraway seed (optional) 1/2 cup butter,chilled 1/4 cup vegtable shortening 3 tbs. vodka 6tbs. water 3-4 ice cubes Filling: 2 tbs . butter 1 med. onion, sliced (1 cup) 3 cups thinly sliced cabbage 1 large russet potato,peeled and thinly sliced (about 2 cups) salt and pepper to taste 1 tbs. apple cider vinegar 1/2 cup heavy cream 2 1/2 cups cubed(1/2 inch)cooked corn beef 4 oz shredded swiss cheese Egg Wash:1 egg beaten with 1tbsp. water In a large shallow bowl, combine flours, salt and caraway. Grate in butter using a larg-holed grater.Fluff butter shreds with flour so each becomes coated with flour. 2. mix shortening with the above,using your hands,gently rub mixture to even out texture.Mix vodka (3 tbs.) and water in a glass ,3 ice cubes. Drizzle mixture over flour mixture, mix with your hands until all the water is incorporated. 4. Divide dough into two seaperate pieces.Flatten out so that they are disk like. Wrap each piece in plastic.Refrigerate for 30 mins. 5.Melt butter in a large sautee pan.Add onion, cabbage,potato,salt/pepper.Cover and cook over low heat,turning occasionaly, until all the vegs. become tender-about 20 mins. You might need to add a bit of water if mixture becomes too dry. 6. Stir in vinegar,cream and corned beef. Spread on a sheet pan to cool. 7. Preheat oven to 375 degrees. Roll half dough out to about 12 inches in diameter.Put in 9 inch pie plate.Trim outer edge. 8. Put filling in pan . Roll out other 1/2 and cover.Crimp two pie crust togeather. Cut vents in pie crust.Brush egg wash on. 9.Bake for 1 hour until crust appears golden brown.Rest for 20 mins. before serving. When serving you may want to top with 1000 Island dressing. ENJOY!
