ok, here is Moms pastry recipe. FYI, I have never made it, because truthfully, I am afraid of failing :D. I just know when mom made it it was amazing. so, here goes: Jean VanDewarks pastry recipe MOMS ALMOST NEVER FAIL PASTRY BEST PASTRY EVER! 5 cups all purpose flour (Robin Hood) ½ pound lard** (Maple Leaf brand) ½ pound shortening (Fluffo brand) 1 tsp salt 2 tbsp brown sugar ¼ tsp baking powder Mix all together until crumbly. Break 1 egg yolk in measuring cup. Beat with fork and fill cup to ¾ full mark with cold water. Add about 1 tsp of vinegar Mix well. If too sticky, add a bit more flour (I would do it just a half teaspoon at a time) Dampen counter slightly to hold wax paper in place (in the “old days”, they didnt have parchment, or silpats, or other things to roll out your dough on, grin) Sprinkle with flour and roll small portion of pastry to plate size. Enough pastry for 3, 9-inch, 2-crust pies, or 4 dozen tarts. Good Luck! ** please note, you HAVE to follow this recipe exactly as is or it won’t turn out the way it should, therefore, you HAVE to use half lard and half shortening. You don’t have to use the same brands, although, if you can get them, then use them. I can’t remember a time Mom didnt use this recipe for her pastry, and for her IT NEVER FAILED! And she never followed a recipe card, she always did it from memory.
