Ablama! Meat stuffed zucchini! This meal is another good way to make stuffed zucchini minus the rice! You could always make plain white rice as a side dish to serve it with but I prefer it without as a tasty light meal! I chose round zucchini. These are available for a limited time during the year and tend to be a little sweeter than the regular ones. But I must say that since they need to be fried, it was a little more challenging to do that due to their shape. However, the end result is a much prettier dish! Ingredients: 1.5 kilos zucchini, cored making sure not to break them or leave holes in them. Remember, you can make garlic zucchini with the inside (recipe below). Stuffing: 1/2 kilo minced meat, a little fatty 1 medium onion, finely chopped 1 tablespoon tomato paste 2 tablespoons vegetable oil Allspice, salt, pepper, nutmeg and cinnamon to taste Enough water to cook the meat after adding the tomato paste Additional vegetable oil for frying the zucchini, enough to cover them half way Dried or fresh zaatar leaves or oregano for garnish The sauce: 2 cans crushed tomatoes plus 2 tablespoons tomato paste 1/2 cup water or more as needed to get a nice consistency 1/2 teaspoon sugar - to reduce acidity Salt and pepper to taste Place all the sauce ingredients in a pot and bring to a boil. Adjust the seasoning, bring down the heat to low and simmer for 15 minutes. Now to prepare the stuffing, fry the onion in 2 tablespoons of vegetable oil till wilted. Add the meat and cook for 5 minutes. Add the spices and salt and cook 5 more minutes. Add the tomato paste, a little waster if needed and continue cooking for another 5 minutes. Set aside and let it cool enough so you can stuff the cored zucchini with it. Heat the vegetable oil well and fry the stuffed zucchini till golden on all sides. Move to drain on paper towels. Place the zucchini in an oven safe, slightly deep, glass plate. Top off with the sauce and cook for another 20 minutes in a preheated oven at 160 degrees. Sprinkle with the oregano and sever on its own with yogurt (or without) and it can also be served next to plain white rice! Enjoy!
