After posting the benefits of Ghee...I have received several requests for the recipe. Its very easy to make and will only take about 45 minutes.... Ingredients: 1 pound or more organic unsalted butter 1. Cut the butter into cubes and place in a large, heavy bottomed saucepan over medium heat. When all of the butter has melted, reduce to a simmer and cook, stirring occasionally, with a slotted spoon. After abut 5 minutes, the butter will begin to form a white froth on its surface and will also create popping sounds as moisture evaporates from the butter. During this stage, it is important to keep stirring at regular intervals. 2. After approximately 10 minutes, the froth will begin to sink to the bottom of the pan where it will collect and form a golden-brown crust. Skim off the residual foam with a teaspoon. When the butter becomes clear, turn off the heat and let it sit for 5-10 minutes. 3. Finally, carefully pour the contents through a fine sieve ( I use a paper towel as a filter) into a bowl or jar, leaving the residue at the bottom of the saucepan. 4. Transfer the ghee to a clean, glass container. Ghee is best stored at room temperature and is said to get better with age, such as fine wine. The key, however, is always to use a clean spoon when taking the ghee from the jar, in order to avoid spoilage resulting from contamination with other foods. What I do is keep two containers; a large one for general storage and a smaller one that I refill every few weeks or when needed for daily use. Enjoy...let me know how it works out for you!
