THAI CHICKEN PATTIES 500 grams chicken mince 1 cup grated mix veggies (zucchini, cauliflower and broccoli) 1/2 cup mashed pumpkin 1/2 teaspoon chilli 1/2 teaspoon lemongrass 1/2 teaspoon ginger 1 teaspoon Thai herbs 1 egg 3/4 cup wholemeal spelt flour (Herbs used are garden fresh in tubes) Mix veggies chicken mince and herbs Add beaten egg and mix Add spelt flour and mix Make in to approx 24 patties and refrigerate for 20 mins Spray pan with cooking spray and cool until golden brown both sides Serve with salad Ideal for freezing for a quick addition to lunch Enjoy xx
