Brown rice with chicken and vegetables ingredients: . 2 tbsp (tablespoons) chopped onion . 1 spoon (soup) of oil . 1 can of corn drained canned . 1 cup (tea) pod sliced . 2 cups (tea) of bouquets of broccoli cooked al dente . 1 carrot, peeled, sliced . 2 cups (tea) of cauliflower cooked al dente . 1 can of drained peas . 1 chicken breast, skinless and boneless diced . Salt and pepper to taste . 1 teaspoon (tsp) of butter . 4 cups (tea) of cooked brown rice . 1 tbsp (tablespoons) chopped parsley Preparation: In a saucepan, saute onion in olive oil for a minute. Add the corn, green beans, broccoli, carrots, cauliflower and peas. Saute for five minutes or until the vegetables are soft. Season chicken with salt and pepper. In a skillet, heat the butter and fry the chicken for ten minutes or until the meat is golden and soft. Add the chicken and vegetables to the rice and mix. Check the seasoning and sprinkle with parsley before serving.
