Chocolate Torte a la Marx (courtesy of my college friend Fred Marx, whose typewritten recipe still lives in my recipe book): Yes, this is as decadent as it looks, but also very easy. 1.5 lbs sweet chocolate (I use semi sweet) 2 tsp water 1.5 tsp sugar 1.5 tsp flour .5 lb soft, unsalted butter 6 egg yolks 6 egg whites whipping cream Preheat overn to 425 degrees. Butter 9 inch spring form pan and dust lightly with sugar. Melt chocolate in the water over hot water (double boiler). Remove from heat tand stir in sugar, flour, and butter until smooth. Beat egg yolks until thick, and gradually mix into chocolate mixture. Beat egg whites until stiff but not dry. Fold into chocolate mixture. Turn into prepared pan. Bake 20 minutes. THE TORTE WILL BE WET BUT WILL BECOME FIRM WHEN COLD. When completely cold, remove from pan. Serve with unsweetened whipped cream (you need this to cut the sweetness of the torte). Serves 10-12 or more: cut VERY small pieces. Can be made ahead and frozen.
