Christmas Pudding (in the slow cooker) 5 cups mixed fruit, pre-soaked overnight in orange juice 3 eggs 1 cup brown sugar 300ml sour cream 2 1/4 cups plain flour 1 tspn nutmeg 1 tspn cinnamon 1 tspn bi-carb 1. Beat eggs and sugar till light and fluffy 2. Add fruit and sour cream (I also added a little orange essence) 3. Sift flour, nutmeg, cinnamon and bi-carb into mixture and combine. DO NOT BEAT! 4. Pour mixture into well-greased pudding steamer, or 2 ltr round Pyrex bowl, cover with baking paper and alfoil. 5. Place in Slow Cooker, adding water till it comes halfway up the outside of steamer 6. Place tea towel under lid, cover and cook on high for 4 hours. 7. Let stand for 5 minutes before inverting and letting cool on rack.
